The vineyards sit on a mixture of clay and alluvial river soils and the yields are a little lower than usual - giving the grapes extra complexity and concentration.\u003c\/p\u003e\n\u003cp\u003eMike then works his magic in the winery - he waits for the wine to ferment naturally, instead of adding commercial aromatic yeast.
