Herbert & Carmen Zillinger
I first came across Herbert back in 2012 in my first job as a wine buyer for Naked Wines. A mutual friend tipped me off on a young guy going places on the Austrian wine scene.
Nine years later I’m delighted to re-unite with Herbert and his wife Carmen for WineSpark. It’s hard to imagine a more exciting producer coming out of Austria right now.
Herbert & Carmen’s obsession with organic and biodynamic farming is a very personal one. Herbert is a third generation farmer, and took over from his parents who practiced conventional mixed agriculture.
Herbert’s grandfather and mother both suffered serious illness, and he believed it was down to pesticide use while farming. So when Herbert took over, he resolved to go natural.
And this natural approach is Herbert & Carmen’s secret weapon to producing amazing wines. All their work is done in the vineyards, making the soils as healthy, lively and balanced as possible.
It means there’s very little to be done in the winery - this is natural wine, transporting the special terroir of the Weinviertal to your glass.
