Like many great winemakers, Pilar started out studying chemistry, before getting into winemaking.
It’s fair to say Pilar is a bit of a white wine nut. She only makes white wine. Her husband makes white wine. She’s a lecturer in the University of Valladolid, teaching students about the chemistry of white wine.
In restaurants and on holidays, she’ll only drink white wine, constantly exploring and learning from the great producers.
Pull out a bottle of red with your cheese… she’ll frown and tell you you’ve got it all wrong. You guessed it, white wine goes best with cheese.
