Fitou is one of the most famous appellations in the Languedoc. But there’s one catch - if you want to put the name Fitou on the label, it has to be a red wine.

It’s a crying shame - the combination of old vines and complex soils here are the perfect raw materials to make great white wine.

So winemaker Katie has decided to make a white Fitou in all but name.

And this wine shows why the local powers that be would do well to move with the times and change those rules.

It’s made up of the typical local white grapes - Grenache Gris, Grenache Blanc, Muscat and Macabeu.

It’s deliciously aromatic and fresh, bursting with flavours of wild herbs, florals and lime zest. 10% of it is aged in oak to give it extra softness, complexity and a slight smoky note.
